She's the Veronica to my Betty (Crocker)


Hi Reader,

Funny story. Last week's newsletter had a typo in it (no, don't go back and look!), and I agonized over it for a full 60 seconds before moving on. That's huge progress for me! Once upon a time, I would've dwelled on that mistake for DAYS.

I joke all the time about how I'm a recovering perfectionist. One day, I was on the phone with my friend Bari, telling her how overwhelmed I felt because I had a lot of projects going on at once, but I also like things in my house cleaned a certain way. While my husband is more than willing to help, I don't always ask him. Then Bari shared the perfect bit of wisdom as one recovering perfectionist to another: "Do you want it done, or do you want it done right?"

This is one of the many reasons I adore Bari. Another reason I love her: she's married to my ex-boyfriend, which we both think is hilarious, as do our husbands. But that's a story for another time.

Bari went plant-based after being diagnosed with Stage 4 Hodgkins Lymphoma, and she shares some seriously delicious recipes on her IG account @thegratefullplate. She's celebrating 2 years cancer-free this week, and in honor of this INCREDIBLE milestone, I'm sharing her recipe from the Betty Crocker project: a creamy vegan rice pudding.
