Well, try as I might, I can't quite stop missing England. It truly felt like home, and I miss everyone and everything there (except maybe the tiny kitchen appliances). When this feeling hits me, I focus on what England didn't have, such as my American family and friends (and big kitchen appliances). Do you know what else England didn't have? Monty's plant-based butter!
Okay, well technically it did for the first month we were there because I packed as many containers of Monty's as I was willing to risk leaking into my luggage. For the record, none of it did, and I should have packed more. By the time we got to visit London and have a proper afternoon tea, it was December, and the Monty's was long gone. Back in our country cottage, I recreated our London hotel's vegan scone recipe, which turned out great, but in the back of my mind, I wanted to do a gluten-free version using Monty's.
Well, I finally got my chance, and let me tell you, this recipe is as easy as it is tasty. I made these scones for my daughter and her friend during a playdate, and they got such a kick out of the fancy china. I, on the other hand, got a kick out of their conversation, which was a debate over whether Draco Malfoy's amazing hair overrides his lackluster values.

Dear Reader, I'm sure your inbox and targeted ads are filled with detox diets and the promise of losing weight. However, I'm not a huge fan of detoxes for the sole purpose of losing weight.
