Kind of like if a lasagna and a cheesecake had a baby...


I'm gonna keep it real, Reader. I've celebrated a decent amount of Jewish holidays in my time, but I've always bypassed the noodle kugel. I don't like lasagna, and I don't like cheesecake, so when I saw that the components of noodle kugel seemed like a cross of the two, I assumed "not for me".

My mother-in-law, however, gave me the ultimate challenge: make a dairy-free version of STEVEN'S FAVORITE noodle kugel recipe. (Steven is my husband, in case you don't know. And in case you don't know this either: I will do anything for love.)

Some people steer clear of dairy for different reasons. Maybe they're vegan. Maybe dairy doesn't agree with their skin 🙋‍♀️. Maybe someone I love is lactose intolerant and consuming copious amounts of dairy results in copious amounts of diarrhea (not naming names).

Regardless, I think this week's recipe for noodle kugel is worth a try, whether dairy is your friend or not. I was pleasantly surprised to discover that I like it, and it was a good reminder for me to keep an open mind about trying new things...although, I'm still not sure about gefilte fish.
